Irish Soda Bread

IRISH SODA BREAD

350 degrees/1-1½ hours

5 CUPS FLOUR
1 CUP SUGAR
1 T. BAKING POWDER
1½ t. SALT
1 t. BAKING SODA
½ CUP BUTTER CUT IN CUBES (ROOM TEMP.)
2½ CUPS RAISINS
3 T. CARAWAY SEEDS
2½ CUPS BUTTERMILK
1 EGG

 

Butter a 10-12” skillet that is about 2-2½” high. (I used my cast iron pan). Mix first 5 ingredients together, add butter and mix by hand till crumbly. Stir in raisins and caraway seeds. Mix buttermilk and egg together, add to dough. Shape into ball and place in pan. You can split dough for 2 loaves if you wish. THE DOUGH WILL BE STICKY.
